Piave Vecchio
Similar to a young Parmigiano, Piave Vecchio is one of those mainstays of Italian cheesemaking. Made from cow’s milk that graze in the fertile plains of the Po Valley in the Veneto region of Italy, Piave Vecchio is aged for about 5 months, making it hard but not dry yet. The texture is hard and compact, with a wonderful flavor that combines the taste of nuts and caramel with sweet, almost fruity notes. Use this flavorful cheese on a cheese board paired with fruits and nuts, shaved over a green salad, or melted over polenta and risotto. Pair with a full-bodied red wine like Barolo.
