Julianna Herbed Goat Cheese
This creamy aged goat cheese, named after the Capriole intern who created it, is lushly rich and aromatic, the bloomy rind crusted in fragrant Herbes de Provence, a traditional French mix of herbs, a secret mix that includes lavender, rosemary and thyme. It started as a version of Old Kentucky Tomme, and turned into a unique cheese by its own right.
Velvety and smooth, Julianna is buttery, with nutty flavors and a pleasant tang characteristic of chevres. The cheese is mild and sweet enough that the addition of the herbs is welcome and lovely, and truly makes Julianna stand out. Serve it as part of a cheese board for a beautiful visual impact and pair with a white wine of your choice.
Capriole is located in Indiana among verdant rolling hills and the Ohio River. Judy Schad and husband Larry amassed a herd of friendly organic goats, and started developing what would later become award-winning goat cheeses. Truly one of the pioneers of American artisan cheese-making.
Ingredients: Pasteurized goat’s milk, culture, animal rennet, salt, Penicilium Candidum, spices (thyme, lavender, rosemary, and wildflowers).
