Our Fontina is a renowned alpine cheese with a DOP denomination, a coveted label of protected origin and production. With sweet flavors that intensify as the cheese ages, Fontina DOP boasts a subtle nuttiness with a hint of honey. When melted, the flavor is earthy with a taste of mushrooms and a fresh acidity. It takes at least 3 months to mature and develop a soft, elastic texture filled with small, thin holes.
The Italians use the milk from Pezzata Rossa and Nera cow breeds to produce the rich milk needed for Fontina. These cows graze in carefully cultivated pastures in summer, producing a sweet, rich milk. Fontina’s DOP certification guarantees that only the finest ingredients make this delicious cheese.
Fontina is a popular cooking cheese that is commonly used to prepare mountain fare like polenta and gnocchi. You can try your hand at the famous Fonduta – a local recipe that features Fontina as the main ingredient. Delicate white wines or a sumptuous red from Piedmont are good companions as they enhance its light, creaminess.
