You’d be hard-pressed to find a more delicious cheese in America. Cypress Grove Creamery makes Truffle Tremor in Northern California. The cheese combines the dense, creamy and superbly buttery texture of a bloomy-rind cheese (think a super-creamy brie) with the earthiness and muskiness of black truffles. The texture of Truffle Tremor cheese is dense in the middle, elastic closer to the rind, and speckled throughout with tiny dots of black truffle. Start by trying it alone, with nothing but a nice glass of white wine. Then serve it on a cheese platter, with polenta or risotto, or blended into mashed potatoes. Pair with a dry Pinot Grigio or Albarino.
Ingredients: Pasteurized cultured goat milk, salt, truffle (Tuber aestivum Vittadini), microbial rennet and enzymes.
