Humboldt Fog, Petite

One of the most beloved American cheeses in the market today, Humboldt Fog comes from Cypress Grove Creamery in the beautiful foggy Northwest part of California. Cypress Grove’s signature cheese, Humboldt Fog is made of goat’s milk. A bloomy snow-white rind hides a cheese that is soft and creamy, with a luscious and dense texture. With age it will tend to grow more runny and develop stronger flavors. While young, this cheese has great flavor qualities, with a nice tanginess and hints of lemons. The middle of the cheese is veined with a thin layer of edible ash, like French Morbier. Serve with honeycomb and pears for dessert with a crisp white wine; slice on top a healthful spinach leaves, apples, nuts, mandarin oranges and cranberry salad. Pair with a crisp white wine.
