Cana de Oveja
A very rare and unique Spanish cheese, Caña de Oveja is made to resemble the French log-shaped Boucheron, a classic chevre. Caña de Oveja is made with sheep’s milk, soft-ripened under a bloomy rind that’s wrinkly and thick, hiding inside a dense, crumbly paste that’s creamy and rich.
It’s rare to find a soft-ripened sheep’s milk cheese, especially one that comes from Murcia, an area famous for its Murcia goats. Cana de Oveja is a young cheese, aged for about 3 weeks before going out to market, but the flavor becomes more intense as it ages. The flavor is buttery and tangy, with notes of lemon and savory notes characteristic of sheep’s milk. Perfect to pair with a sparkling wine.
