Tapioca Pearls – Small #20, 1/8 Inch
The “pearls” are sphere made of tapioca flour, with a gummy, chewy texture, and you’ll find it used to make Chinese Bubble Tea. You must cook Tapioca Pearls first, by boiling then in 7 parts water to 1 part tapioca pearls, stirring so they won’t stick. They should cook for 15 minutes, then remain covered (removed from heat) for another 15. Then rinse in cold water and drain. Use immediately.
