Sumac

Sumac has a bold deep red color and a nice tart flavor. This spice is prized and widely used in Middle Eastern and Arab cuisine, where it’s added like lemon juice to provide a citrusy flavor. Ground sumac has a pleasant, coarse texture.

Use it with fish, chicken, vegetables and rice. Use it as a substitute for lemon juice, especially when the liquidity of lemon juice could affect the consistency of the dish. Sumac has a fruity tart flavor often more mild than the overpoweringly sour taste of fresh lemons. It works especially well with other Middle Eastern spice as part of a dry rub for kebabs, kabobs, and grilled meats. Dust dried sumac over hummus, baba ganoush, feta cheese, salads, and seasoned dipping oils.

Like salt, sumac is a flavor enhancer, helping the all the flavors in a dish pop.

The dried sumac spice can be stored for up to one year if stored in a closed container.
