Olympia Provisions cooks this flavorful sausage over Applewood chips for hours in order to achieve its impressive smoky flavor. Each sausage is handmade by recreating a nearly extinct traditional technique of preparing charcuterie from Europe, that is seldom seen in America.
This cooked sausage is so delicious that you can easily enjoy it served hot or cold: for some warmth, we recommend searing it in a pan with some summer greens and then serving with a mustardy potato salad, or as a smoky hot dog layered with all your favorite toppings – not that it’ll need any to enhance its natural flavor! You can also chop it up and throw it into a tomato-based pasta to bring some additional flavor to a quick mid-week meal. Its sublime smokiness makes it a beautiful addition to a cheese board.
