The classic Italian Finocciona, amped and loaded with spices! The Capri is the reloaded version of Olympia Provision’s Finnocciona salami. They take the same recipe but really pile up the garlic, black pepper, and fennel flavors plus add red wine, chili flake, black pepper and cayenne pepper for a burst of heat. Rather than the classic herbal spicyefennel flavor of Finocciona, you also get sizzling heat.

Serve this spicy salami with robust cheeses to temper the heat, like a creamy goat cheese, or a silky firm cheese like Cheddar, Gouda, or Landaff. You want to complement or temper the heat of Capri, not really compete with it. A full-bodied red wine or hearty brew will also pair nicely.
