A favorite cut of pasta in the south of Italy, “rigatoni” means “little ridges,” a characteristic that makes this variety especially good for catching sauces and grated cheese. Our version is made using durum wheat semolina organically grown on a small cooperative of family farms in the rolling hills overlooking the Adriatic Sea.
