Little Boy Blue
There are few blue cheeses made out of anything but cow’s milk, and Hook’s Cheese Company’s Little Boy Blue is one of them. Little Boy Blue cheese is made in Wisconsin out of sheep’s milk, then aged about 2 months, making it quite young. The texture is hard and crumbly, like Roquefort, but with a creamy and buttery feel. It has that wonderful quite pungent and salty quality that makes it a great choice for blue-cheese lovers. Use this sheep’s milk blue cheese crumbled in salads or served with crackers in a cheese board. Pair with a Pinot Noir.
Ingredients: cultured pastuerized shee’s milk, salt, enzymes and penicillium roqueforti.
