Dark Muscovado Sugar is a natural, unrefined sugar from the African Island nation of Mauritius. Sugar milled in Mauritius is highly valued by chefs and bakers because it retains much of the flavor of the cane grown in soil rich with volcanic ash. Long enjoyed in Europe, this sugar has only recently been made available in the United States.

Dark Muscovado has a fine, moist texture, high molasses content, and strong lingering flavor that makes it a favorite of chefs and bakers. Use in recipes calling for dark brown sugar — it adds a whole new flavor dimension to baked goods.
