Jeune Autize Goat Morbier
Also known as the goat cheese version of Morbier, our Jeune Autize is aged by master cheesemaker and affineur Rodolphe Le Meunier.
Jeune Autize Goat Morbier has a layer of ash that runs through the middle of the cheese, that distinct mark of Morbier. Originally, the ash was used to separate the two different milks that were used to make the cheese – morning and evening milk – but today is added purely for aesthetic reasons. Jeune Autize is made of goat’s milk, which gives it a unique light, bright and tangy flavor, unlike the earthy cow’s milk Morbier. The paste is bright white, like most goat cheeses, but with a tint of blue that comes from the vegetable ash.
Le Meunier gets his goat Morbier cheese wheels of Jeune Autize young, at 2 weeks, from the cheesemaker in Bordeaux. In his cellars, and under his expert gaze and care, he ages them for two to four months, until he deems them ripened to perfection and ready to add his seal of approval.
