Although the color is more salmon-orange than red, Red Lentils are nevertheless turn to a golden color when cooked, with the added advantage of quick cooking. They don’t hold their shape very well so they’re best suited for pastes and purees. They’re very often found in Indian and Southern Asian recipes like curries and masalas.
