Clear Mirror Glaze – Brush and Spray Application

This practical glaze is the professional baker’s secret weapon. It add that lovely, brilliant shine to cakes, tarts and pastries, giving it that professional, glossy finish. The concentrated neutral glaze does not add any flavoring, and can be used with a brush or a spray gun. Brush application: add 10-30% water. Spray application: add 40-60% water. Add water by weight to glaze. Heat to a boil. Allow to set several minutes. Apply.
Ingredients: Sugar, Glucose, Water, Pectin, Citric Acid, Sodium Benzoate, Tricalcium Phosphate, Sodium and Calcium Alginate.
