What is Merguez?
Algeria, Morocco, and Tunisia make up what is known as the Maghreb region of North Africa. With a large Muslim population, the eating of pork is prohibited, which is why Merguez sausages are generally made from mutton or lamb. Beef and veal are other alternatives but are not as popular.
Stuffed into natural sheep casings, this spicy slender sausage is bright red thanks to its fiery spice blend. Getting both its color and its heat from Harissa (ground red chilis), which are also native to the region. Lemon, olive oil, and a handful of other spices, including cumin, fennel, and coriander, give this sausage a uniquely delicious flavor.
Ingredients: Lamb, Beef (beef cheek meat, beef), water, salt, carrot powder (carrot powder and 2% silicon dioxide), sugar, paprika, spices and spice extracts, garlic powder, onion powder, dextrose, stuffed in a natural pork casing.
